Vegan Alternatives for Dairy Allergies

A little treat at the end of the night - or week - hits the spot. But what if you have an allergy or on a special diet, and can't easily enjoy a sweet when you want?

This chocolate chip cookies are to the rescue for those who have dairy allergies or live the vegan lifestyle!

Finding yummy treats are hard for those that don't eat "normal," because many people are lactose intolerant, and for some, over-the-counter medication doesn't work. For some, a vegan lifestyle provides a healthy alternative and a way to help animals and the environment.

Like most people, both crave a sweet treat once in awhile. If these specialty treats are found, they are usually extremely expensive, while the cheaper treats sit in the grocery stores, stuffed with the large amounts of chemicals and dairy products. So, what is a person to do, especially on a limited budget?

The God of Treats

Instead of buying those packaged goodies, make your own. Yes, your kitchen is a mecca for all the yummy treats you want, and you are the baking god! And a classic, the chocolate chip cookie is a good place to start!

Everything but the vegan chocolate chips can be found in your pantry and refrigerator, or in the local grocery store if you ran out.

It may take a little bit of your time, because it's not as simple as pulling apart and throwing them in the oven, but once they come out and you take that first bite (after it cools slightly), you will fall in love.

If you don't have a nut allergy, experiment with walnuts or slivered almonds. It adds a punch of protein to your goody, so you won't feel as guilty!

The Recipe

These come out very cakey and can be difficult to get off the pan. If you want more solid cookies, only use a little less than 1 cup butter, a little less applesauce, and a full cup of brown sugar.

Preparation time: 10 minutes

Serves: 3 dozen

Ingredients:

  • 3/4 cup raw sugar
  • 3/4 cup brown sugar
  • 1 cup vegan margarine
  • 1 teaspoon vanilla
  • approximately 1/3 cup applesauce (enough to equal 1 egg)
  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • a dash of salt
  • 1-12oz bag vegan semi-sweet chocolate chips

Directions:

  1. Heat oven to 370 Fahrenheit.
  2. Beat sugars, margarine, vanilla, and applesauce together in a large bowl with a mixer or standing mixer.
  3. Stir in flour, baking soda, and salt, by hand with a large spoon. Dough will be somewhat stiff.
  4. Stir in chocolate chips.
  5. Drop by rounded teaspoonfuls onto a cookie sheet. Bake for 10-15 minutes, or until light brown. The first batch will probably take the full 15 minutes, but toward the end (if they didn't all fit in at once), it will be less and less time, so keep an eye on your cookies!
  6. Let cool before eating!

Can freeze in a air-tight container for a few weeks, or stored in the refrigerator for a week or two.
