Easy and Delicious Meatless Thanksgiving Meal Additions

Your vegetarian guests will enjoy either of these easy meatless recipes on Thanksgiving Day.

While many people are looking forward to eating turkey on Thanksgiving Day, vegetarians will appreciate being offered a meatless entrée or even a side dish that includes a meat replacement.

These hearty, non-traditional Thanksgiving recipes use minimal ingredients, are both quick and easy to make, and will leave your vegetarian visitors feeling fulfilled. Save time by using pre-packaged ingredients, but check the labels to make sure they are vegetarian.

Tofu in Gravy

This dish cooks up quickly, so make it when the turkey is almost completely cooked. Alternately, tofu absorbs the flavor it is marinated in, so cooking it one day ahead will give the tofu a chance to soak up the seasonings, creating a more flavorful dish.

Serves 4 to 6

Ingredients:

  • 1 Block of Firm Tofu
  • 1 Packet of Vegetarian Brown Gravy
  • 1 cup of Mushrooms, sliced
  • 1 Tablespoon coconut oil
  • ½ Teaspoon Garlic powder
  • Pinch of Sea Salt
  • Pinch of Pepper

Directions:

  1. Drain the water off the Tofu after opening and cut into chunks. Put into a freezer container and freeze for at least 24 hours. Freezing tofu gives it a firmer, more meat-like texture. This step may be skipped, however, if you are short on time.
  2. Prepare the brown gravy by following the directions on the package.
  3. Place tofu in gravy and let marinate for at least 30 minutes.
  4. In another sauce pan, place coconut oil and melt over medium heat.
  5. Add mushrooms to coconut oil.
  6. Sprinkle mushrooms with garlic powder, salt and pepper.
  7. After tofu is done marinating, remove from pan and add to the mushrooms, sautéing until brown.
  8. Serve mushrooms and tofu in one dish, with the gravy on the side.

Vegetarian Stuffing

Make an extra batch of stuffing on the stove top using vegetarian broth instead of chicken broth. Adding in meatless sausage will make this side dish extra hearty.

Serves 4 to 6

Ingredients:

  • 4 cups of herb bread cubes of 1 - 6 oz. bag of stuffing mix
  • 2 tablespoons of butter or margarine
  • ½ cup of onion, chopped
  • ½ cup of celery, chopped
  • 1 1/3 cups of water
  • 1 vegetarian bouillon cube
  • 1 package vegetarian breakfast sausage

Directions:

  1. Melt butter or margarine over medium heat.
  2. Saute onion and celery in the butter until translucent.
  3. Meanwhile cook sausage as directed on the package, slice into bite-sized pieces.
  4. Add water and bouillon to onion and celery mixture.
  5. Heat to boiling; simmer until bouillon dissolves.
  6. Remove from heat.
  7. Stir in bread cubes and sausage.
  8. Cover and let stand until bread is softened, usually 3 to 5 minutes.

Serve - and watch your vegetarian guests - enjoy.
