Roasted Red Pepper & Goat Cheese Linguine

This dish is simple to prepare and has a beautiful flavour profile that will please any palate. The sweet peppers and the smooth goat cheese is a heavenly match.

Roasted Red Pepper & Goat Cheese Linguine

These flavours when added together are nothing less than instant classics. The time and preparation that goes into this great vegetarian meal is quick and painless. This recipe is not only great tasting but will also take you less than 30 minutes to make, something our busy lifestyles will appreciate.

Ingredients:

  • 4 oz Goat Cheese
  • 8 oz Roasted Red Peppers, julienned
  • 6 Shitake Mushrooms, sliced
  • 2 Large Portobello Mushrooms, sliced
  • 3oz Basil Pesto Sauce
  • 4 tbsp Olive Oil
  • 2 tsp Chopped Garlic
  • 1lb Dry Linguine Noodles
  • 2oz Sundried Tomatoes, sliced
  • Salt & Pepper to taste
  • ltr cold water

Preparation:

  1. In a large pot, add 1 teaspoon of salt and the cold water. Bring to a rapid boil and add the linguine noodles. Cook for 9 minutes or until desired doneness.
  2. While the water is coming to a boil, place a large saucepan on the stovetop at medium heat. Add 1 tablespoon of olive oil. Add garlic, mushrooms, roasted red peppers, pesto sauce, and the sundried tomatoes. Cook until the mushrooms become tender, roughly 5 minutes.
  3. Take the Saucepan off the heat and add the remaining olive oil and season to taste with salt and pepper.
  4. Immediately after the pasta is cooked toss in the saucepan and mix all ingredients thoroughly.
  5. Divide into 4 bowls, and garnish each pasta with 1 ounce of goat cheese and serve immediately.Serves: 4
