This is a simple tomato curry more popular in South India. It uses the most basic ingredients - onions and tomatoes, and can be rustled up in a jiffy.
Tomatoes form the base of most curries in India. Though they are not as popular as a base for curries in South India, since coconut is a more common base in the South. But this is a simple, easy to make curry and used quite often.
Preparation Time: 5 minutes
Cooking Time: 20 minutes
Ingredients:
- Big Tomatoes – 5 to 6
- Big Onion – 1
- Chilly Powder – 1 tsp
- Cooking oil (Sunflower or Canola) – 2 to 3 tsp
- Garlic – 2 cloves (optional)
- Curry Leaves – 1 sprig (optional)
- Salt to taste
Method:
- Heat the oil in a small frying pan
- Add the curry leaves
- Slice the onions into small pieces
- Add them to the hot oil and sauté for a few minutes, till the onion slices start turning brown
- Chop tomatoes into small pieces
- Add the tomatoes to the pan and sauté for a few minutes, till tomatoes start shrivelling
- Pour half a cup of water into the pan
- Turn the heat to low
- Add the salt and chilly powder
- Let the mixture cook for 10 minutes
- Keep stirring to prevent the mixture from sticking to the pan.
- The mixture will become thicker and like a paste.
- Remove from heat and serve hot This curry has a sweetish sour taste and can be refrigerated upto 2 weeks. Just heat a little in a microwave oven before serving.
This tomato curry can be used as an accompaniment to toast, rotis or any Indian pancake made of rice, like Idly or Dosa.
Quick Tomato Rice
This tomato curry could also be mixed with rice to make a quick Tomato rice a popular lunch dish.
Ingredients
- Cooked white rice - 1 cup
- Tomato Curry - 3 to 4 teaspoons
- Ghee - 1 teaspoon (optional)
Method
- Cook 1/2 a cup of white rice. Make sure that the grains are separated after cooking.
- Mix 1 cup of cooked rice with 3 to 4 teaspoons of the tomato curry.
- Add a teaspoon of ghee, if using
- Serve hot with crisps
Instant Potato or Vegetable Gravy
This tomato curry could also be converted into a quick gravy with potatoes or mixed vegetables.
Ingredients
- Potatoes - 4 big or 2 cups mixed vegetables
- Garam Masala or Curry Powder- 1 tsp
- Tomato Curry - 8 teaspoons
- Fresh coriander - Handful
Method
- Boil 4 to 5 potatoes, peel them and slice them.
- In a pan, heat 8 teaspoons of the tomato curry.
- Pour half a cup of water in the mixture. Make sure that the tomato curry is sufficient to coat all the potatoes.
- Add some salt if required.
- Simmer and add a teaspoon of garam masala powder or curry powder before removing from heat.
- Sprinkle some chopped fresh coriander and serve hot.
- Replace potatoes with 2 cups of cooked mixed vegetables like carrots, beans or cauliflower.
