Here's a delicious, easy-to make, economical non-dairy milk. It's quick to make, nutritious and requires no special ingredients or equipment.

Many people cannot easily digest regular milk because of lactose intolerance. There are some milk products available at grocery stores which have the lactose removed.

Non-Dairy Milk Alternatives

Many people choose non-dairy alternatives like soy milk, rice milk, almond milk or others. But these alternatives to regular milk are often quite expensive in comparison to regular milk. The taste, texture or consistency can be a disappointment as well. Some soy milks are quite thick while rice milk can be thin and lacking the creamy texture of regular 2% milk.

Inexpensive, Easy-to-Make, Non-Dairy Vegan Almond Milk Recipe

The good news is, making non-dairy milk at home is easy and cheap! A few basic ingredients are needed along with a good blender or milk making machine.

Making non-dairy vegan almond milk is very simple. Here are the instructions.

Basic Almond Milk Recipe

  • 1 cup raw almonds
  • 5 pitted dates
  • 2 cups water
  • Pinch sea salt
  • 2 tablespoons raw cashews or unsweetened coconut (optional)
  • 1 teaspoon vanilla (optional)

  1. Put one cup of almonds and five pitted dates in a jar. Add two cups of water. Soak overnight.
  2. Place the ingredients in a blender with a pinch of sea salt. Add optional ingredients. Adding cashews will make the milk extra creamy. Coconut will make the milk creamy as well as adding a coconut flavour.
  3. Blend on low for a few seconds, adding water as necessary to keep the ingredients moving. Blend on high until smooth.
  4. Add enough water to make the milk the desired thickness. Add one litre or quart to make the milk slightly thick or add up to two litres or quarts for thinner milk.
  5. Pour the milk through a strainer into a glass jar. Store in the refrigerator. Use within a week.
A Note on Blenders

Blenders vary from model to model. The greater the power and higher the rpm’s that a blender operates at, the smoother the milk will be. A very powerful, high spinning blender like the VitaMix, produces milk that does not have to be strained.

Making Soy and Rice Milk

People who regularly use soy or rice milk might benefit from buying an automatic milk-making machine like SoyaJoy. This machine uses soy beans or rice that has been soaked overnight to make fresh non-dairy milk in minutes. Simply add the ingredients into the fine-mesh stainless steel compartment, fill the stainless steel jug with water up to the fill line, set the top of the machine on the canister and turn it on.

The SoyaJoy heats the water and grinds the ingredients. When the milk-making is done, the canister is filled with hot, fresh non-dairy milk. The canister holds the pulp which can be used in baking or for making veggie patties. Changing the basic recipe yields a variety of milks that can be used in place of regular dairy milk.
