Serves 2

Ingredients:

  • 1-3 teaspoons extra virgin olive oil
  • 1 small, yellow onion, thinly sliced
  • 1-3 minced garlic cloves
  • 2 medium red-skinned potatoes, diced
  • ½ head of green cabbage, shredded
  • 1 medium red bell pepper, chopped
  • Salt and pepper to taste

Directions for Preparing Hash Browns

  1. Heat one teaspoon of the olive oil in a large skillet over medium-high heat. Continue to add other teaspoons as needed while cooking to avoid ingredients sticking.
  2. Turn heat to medium and add onions and garlic (see photo 1). Sauté for several minutes, until they start to become tender.
  3. Add the diced red potatoes, and stir fry the mixture for several more minutes (see photo 2).
  4. Add cabbage, and stir to mix thoroughly (see photo 3).
  5. Add red pepper, and stir to mix thoroughly (see photo 4).
  6. Season the mixture to taste, and then cover with a lid, lowering heat to medium low or low, low enough to prevent sticking. Continue to stir occasionally until potatoes are fork tender.
  7. Serve with scrambled eggs (see photo 5) for a healthy, high-protein vegetarian meal.
